When I think of pineapples, my mind goes directly to the islands. I have been very fortunate to have visited many South Pacific and Indian Ocean Islands, from Guam to Reunion Island, Fiji to New Caledonia. It's all so beautiful. Here are two great recipes using pineapples.

Orange Blossom Cake 🍊 by George Geary

Last weekend, I was out at the California State Citrus Park enjoying the aroma of the blossoms. I wanted to put together a beautiful cake, and here it is.

Timeline: 1995 "Food for the Soul" Cream Cheese Pound Cake by George Geary

A few months back, I was searching for historical cookie recipes for an article about our mid-century home in Palm Springs. We wanted accurate recipes from the 1960s sitting on our table during the photoshoot. I came across Marguerette Allen from the south. Newspapers picked up a story called “Food for the Soul” featuring recipes from Black home cooks. This is her Cream Cheese Pound Cake.

It was rare for mainstream newspapers to write about any other food besides common foods that middle America would prepare or eat. This was a groundbreaking story with 10 recipes.

Wednesday July 8th, 2020: BTLA Pasta Triffle Salad and Banana Cake by George Geary

I try to utilize all of my platters/bowls, dishes etc. in different ways. Here I use my truffle bowl as a salad dish. It looks great and try it yourself. All, homemade Ranch Dressing to end all! For dessert, Banana Pecan Cake Bars with Rich and Creamy Cream Cheese Icing.

May 12th: A Surprise Birthday Cake for Ivy by George Geary

When you get a knock on the door from the soon to be 6 year old next store neighbor requesting a birthday cake you cant help but deliver. Plus she asked for my favorite cake. A Rich Chocolate Cake and Chocolate Cream Cheese icing. I decided to make it a “surprise” cake. Which means, when she cuts into the center a treasure trove of M&M’s will be cascading out. Banana Chocolate Chip Cake by George Geary

A very moist and flavorful cake.. I like to use very very ripe bananas that are very dark. The sugars come up and wow.. so much flavor. Use any kind of Bundt tube pan for this recipe.

A trick I tell all of my students when you are making a Bundt cake… No need to grease and flour the pans as it is too difficult to get into all of the cracks and crevasses.. Spray pan with a non-stick spray. After the cake has completely baked, set a timer for exactly 10 minutes. Then invert directly on a cooking rack. The pan will lift off perfectly.

Last week I was teaching in Lodi at the great Wine and Roses Event center/hotel, spa etc.. If you get into the Lodi area, they have so many great wineries and you can just head straight to Wine and Roses for tasting of the valley bounty. 

I taught a class all on chocolate and when I posted a picture of the cake with frosting the requests started coming in. So here they are!

It's All Green... Pistachio Cake with a Sherry Glaze by George Geary

I first made this cake in the early 1980s in a small Hollywood cake bakery called The Cake Walk it was on 3rd street and La Brea in the middle of all of the studios and the action.  Daily we would get filming crews, stars and the like. For weddings the groom would always pick this cake as the base. Funny how you can make a cake and the flavors and aroma of the kitchen take you back to days gone bye.

 

Here is the glazing of the cake.... We used to boast.. "Glazed with Harvey's Bristol Creme Sherry".. The only bottle of Harvey's was in the display case next to the cake. We used jug sherry at a tenth of the cost. Today I use Galleano Winery Sherry Crema Cask Three.. (Below is the link to order and more information).

Banana Pecan Three Layer Cake

Last night I thought I would bake a cake... I was about to get out the normal 9-inch pans and then decided that a taller version would be oh so much better! I had about 5lbs of over ripe bananas that I kept in the freezer. Time to defrost them! 

After mixing the batter and popping the cakes into the oven I thought I would check out Facebook.. After a short chat with a few friends the buzzer rang... I took the cakes out and placed them on a cooling rack.. Grab the iphone... snap snap.. Posted! Within 5 minutes these pictures went viral! You would have thought it was a star in trouble. No just a pastry chef that has baked for the stars!

The excitement of the posts were overwhelming.. From the high seas of crews around the globe to a colleague in the sky flying 40,000 feet in the air to UK and French friends.. to even my buddy Brian that is serving in Africa in the US Army. I wish I would have had a cake for each of them!

Today I iced and decorated the cakes.. Again. mayhem. This time from a few of my friends that are tv and music stars!
