Pans
Cheesecake Pan Set:

One of each: 6-inch, 8-inch, 9-inch and 10-inch all 3-inches tall
This is the ultimate cheesecake pan set. These pans are mentioned in my first book on page 10. If you have a recipe that calls for a spring form pan you can make it in this pan with better results. The sides do not spring outward. They are solid. The bottom is flat so you can take the cheesecake off the pan base. Unlike the "washboard" feel of a spring form. To remove a dessert from these pans, just place a heavy can under and push side of pan downward.

Round Baking Pans

Two 9-inch round baking pans at 2-inches tall
Measure the top of your baking pans, now turn them over and measure again. Both should be 9-inches. Most are not so the pans and "nest" when not in use. But this creates "domed" cakes. These are very heavy-duty.

Tube Pan

00-cup tube pan. Perfect for my Pistachio Cream Cake. Anglefood and more. You can see it does not have "feet" to cool the cake down when you turn it over. Because the tube is higher then the pan itself.
$24.50
Rectangle Baking Pan

One 9x13x2-inch Baking pan.
This pan makes perfect brownies, cookie bars and cakes. The corners are perfectly square unlike a glass pan.

Magic Line Pans from Parrish's. I have been using these pans since I was in pastry school. Family owned in Los Angeles for over 50 years.  American Produced. Not a china knock-off.  All of their pans are used by professional chefs and pastry chefs. I offer them on this site as they are hard to find outside of restaurant supply stores.
